Carolina Cookwood Cherry Wood Smoking Chunks for BBQ Meat Brisket Ribs Chicken Turkey and More
Aged Cherry wood chunks are great for low & slow meat smoking and grilling. Enjoy that authentic Carolina BBQ experience with Carolina Cookwood wood chunks. Carolina Cookwood is freshly cut and naturally cured producing exceptional flavor! Whether you are grilling over wood coals, cooking with a wood-fired oven, or slow smoking your barbeque, you can be confident that our cooking wood will produce the longest-lasting coals of any wood on the market.
When wood is kiln-dried, it is exposed to very high temperatures, virtually cooking the natural flavor out of the wood. This is typically done by mass producers so that the wood won't sweat and mildew in plastic packaging. Carolina Cookwood is cured naturally and hand-packaged for you in natural, breathable (12" x 20") burlap bags.
HOW TO COOK WITH WOOD CHUNKS
When using a charcoal grill, place several chunks directly on your coals when lighting them. When coals are ready (using tongs) move the wood chunks to the side, away from the coals. This allows the wood chunks to smolder without flaming up.
When using a gas grill, place several chunks on the cooking surface about ten minutes before cooking. They will get hot on the cooking surface and release smoke. Close the cover while cooking so that your food will absorb the great wood flavor. You may also place your wood chunks in a small cast-iron skillet on the cooking surface.
When using a charcoal smoker, the procedure is the same as the charcoal grill except you will continue to feed your smoker with chunks.
When using a gas smoker, keep adding chunks until it meets your preference.
The key to achieving superior flavor is temperature control and the length of time in the smoking process. Try using your wood chunks lightly until you know just how strong a flavor you prefer. You may also try mixing wood flavors e.g. Hickory and White Oak.

Smokers Alert ... A sweet hint of Bourbon in the air AND in the meat. The smoke is mild but with the Bourbon kick it's perfect for beef, pork chicken or fish. If you smoke meat you've got to try these!
